But time with others is so important. A BC winery that shares this philosophy is TIME Winery. Their motto is to enjoy TIME together (see what they did there?) so we thought they would be a good fit to show with a few great pairings that can inspire your next outing.
Based in downtown Penticton as the city’s first downtown winery, the TIME Winery winemaking team sources fruit from their community of friend and partner growers, and has full flexibility to make whatever they want, creating the very best wines in any given vintage.
With this range of grape options, like a chef, the winemaker can offer a flexible ‘menu’ of wines, but TIME Winery is perhaps best known for its Meritage wines. Pronounced like ‘heritage’, Meritage wines are red or white blended wines created solely from specific “noble” Bordeaux grape varieties, and are made from the very best wines of the vintage.
To taste a TIME Meritage and enjoy great Italian food visit one of the Trattoria locations (Kitsilano, Burnaby, and Park Royal in West Vancouver). Try their Fritto Misto, featuring the freshest seasonal vegetables fried to perfection, or the popular Forno Roast Vegetables, featuring carrots, fennel, squash and maple thyme.
The culinary team at Trattoria suggests enjoying it with the 2014 TIME Winery White Meritage, blend of Sauvignon Blanc and Semillon, which shows rich and vibrant flavours of honeydew, pear, and a hint of tangerine, balanced with apricot, mango, and ripe gooseberry. Red wine fans need not dismay: you can also try a red Meritage here, for a different flavour experience. The 2013 TIME Winery Red Meritage is a blend of Merlot, Cabernet Sauvignon, and Cabernet Franc; a bigger red wine which delivers notes of ripe red berry and dark cherry with spicy pepper and sage notes.
If you want to just gather your gang for snacks with a nice bottle of red wine, then we suggest you indulge in some of the city’s best-loved edamame, topped with either kosher salt or jerk spice, found at The Blackbird. The salt and spices of this shareable classic help to lift the fruit in a bold red wine like the TIME Winery Cabernet Sauvignon.
Or if your gathering is a downtown, post-shopping, casual veggie burger-and-fries kind of dinner with the in-laws – Cinema will hit the spot. The patties are made from scratch with brown rice, quinoa, and chickpeas, and topped with alfalfa sprouts and pickled cabbage. Yet another delightful dish to partner to the TIME Cabernet Sauvignon, a full-bodied but approachable wine.
