#ICYMI: DIY Vietnamese Spicy Tofu Salad

In less than 30 minutes you can prepare and be eating this fresh, crunchy, and flavourful Vietnamese vermicelli spicy tofu dish with all its tasty toppings!

Kitchen Tip – Before you get started tape the FreshPrep instruction sheet on a cupboard door at eye-level and know that is not going to get buried, burned, or generally destroyed during meal preparation.

Put a medium size pot of water on to boil and sort the pre-portioned packages into three areas – to prepare, veggie toppers, and spices.

Veggie toppers with peanuts and chili paste

The water boils within five minutes and in goes the vermicelli. Reduce heat to medium, cover the pot, and let boil for 3-5 minutes. In that time, take a sharp knife and pre-cut the packaging on the other items. Now your noodles are ready, slide into a colander, rinse and drain, and set aside.

Cubed tofu ready for the hot pan

Drain the extra firm tofu, pat dry with a clean dish cloth or paper towel and remove as much of the moisture as possible for crispier result. Heat a large non-stick skillet with a drizzle of oil (your choice of olive, sesame, chili) over medium heat. Dice the tofu into ½ inch cubes and season with salt and pepper. When the oil is just starting to smoke, add the tofu, and fry until golden on all sides. This should be about 7-10 minutes. Turn off and remove from heat.

Fine chop fresh herbs and set-aside with onions

In a bowl whisk together the sugar, soy sauce, lime juice, rice vinegar, and sambal.

Everything is now prepared and it is time to build your bowl! Start with a base of noodles, topped with fresh veggies, fried tofu, and spoon the sauce over top and let it gravity pull it all the way to the bottom to marinate the rice noodles.

Lunch portion read to enjoy!

Although this box is for 2 persons the resulting portions are very hearty, so after I set-up two dishes the remainder was tucked away for tomorrows cold salad lunch.

This dish has a great nutrition breakdown with each full serving having 843 calories of which 34g is protein, 132g of carbohydrates and is low in fat at 19g.

Loved that this dish was half raw and the dressing was nicely balanced between sweet and heat. To satisfy an enduring hot sauce obsession, I did add a few shots of Sriracha!

All the packaging in your FreshPrep order is ecofriendly. Simply rinse the plastic packaging and return to the empty cooler bag, along with the ice pack, and it will be whisked away and responsibly recycled.
