Known for creating wines with aromatic, crisp, and juicy flavours – making the most out of the aromas the BC terroir brings – Singletree Winery is a small, family-operated vineyard located in Mt. Lehman, in British Columbia’s Fraser Valley.
One of my favourite wines from their cellars is the Singletree Estate Grüner Veltliner. The renowned white varietal of Austria, Grüner Veltliner has been grown in BC for less than a decade, and Singletree Winery is one of six provincial wineries producing wines from this unique grape. The Grüner Veltliner has been cool fermented in stainless steel to retain fresh aromatics and lively acidity. This refreshing white wine boasts aromas of citrus, peach, and honey and is amazingly smooth and well rounded. With only 150 cases produced of the single varietal, this wine is as exclusive as it is delicious.
When thinking of a pairing for this refreshing wine, I could not help but think spicy so we headed to My Shanti overseen by acclaimed chef and personality Vikram Vij, owner of his famed and self-named restaurant Vij’s.
Vij’s wine program has won several awards under the curation of Mike Bernardo, including the Award of Excellence from Wine Spectator and Gold Prize for best wine list from Vancouver Magazine, and he now brings this expertise to My Shanti.
“One of our classic vegetarian dishes is the samosa chaat. I have chosen to pair this with the amazingly smooth Grüner Veltliner. Its level of acidity cuts through the sweetness of the date tamarind chutney in the samosa chaat, but it also stands up to the fresh mint, intensity of the red onion and the acid of the tomatoes. This makes it a refreshing wine and food pairing,” Bernardo says.
From eggplant bharta to green jackfruit, chickpea sweet potato, cashew koftas, and fresh-sprouted lentil salad, there are so many delicious and exotic plant-based dishes to choose from. Make a night of it, and venture out of the city to enjoy international Indian flavours paired with wine from our own backyard.
